Lotus tea, that is also named as lotus flavored tea or lotus scented tea, plays significant role in Vietnamese culture. The lotus flower, that is used to bring tea aroma, should be cut early in the morning when the lotus buds start to open. Next, there are main ways to make different types of Vietnamese lotus tea: quickly-scented and well-scented.
Quickly-scented lotus tea. The petals are spread to reveal the puppet, then the tea is added (nearly 15-20 grams of tea leaves per flower). Then tea masters fold the petals, and wrap the flower with the leaves. It is important to ensure to be cautious and not to pack it too tightly. Next, the flowers are put in a pot to rest during night. To preserve this lotus tea, lotus flowers are put in the frozen compartment of the refrigerator at approximately -18 °C.
Well-scented lotus tea. This method of production lotus tea considers using the lotus rice to scent the tea since the lotus rice contains the most fragrant aroma. Each lotus must be separated from the rice. After that, the lotus rice is screened to remove the impurities. Tea specialists line flat-bottomed basket with lotus leaves, evenly pour a layer of tea over a layer of lotus rice. Further, they cover with a layer of lotus leaf on top, and, finally, leave it overnight.
The next day, the tea is sieved to remove the old lotus rice and dried. This process is repeated 5-7 times until the tea can totally acquire the lotus flavor.
This method can be applied with a more considerable amount of tea.
